Copy Cat Otis Spunkmeyer's "Cranberry Oatmeal Cookies" Recipe


Copy Cat Otis Spunkmeyer's "Cranberry Oatmeal Cookies"
Makes 4 dozen cookies
Ingredients:
3/4 cup brown sugar
3/4 cup granulated sugar
8 Tablespoons unsalted butter
1/2 cup vegetable shortening
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon cloves
2 teaspoons vanilla extract
1 large egg
3 cups rolled oats
1 cup unbleached all-purpose flour
1 1/2 cups dried cranberries, diced
1/4 teaspoon orange oil (or 1 Tablespoon grated orange rind)
1/2 cup diced walnuts
Preheat oven to 350.  Drop by Rounded Tablespoonfuls about 2" apart on slightly greased cookie sheet.  Bake at 350 for 9 - 11 minutes or until the edges are golden brown (if dough circles are frozen, bake for 13 - 15 minutes).  Cool for 15 minutes before removing from baking pan.
